Amazingly Delicious Healthy Desserts Perfect for Summertime

With summer now right around the corner, you’re probably starting to panic that you’ve left it too late to begin your summer diet. Rest assured that it’s never too late, and as there’s no time like the present, why not get started right now? But hold on? Dieting sucks, and healthy food sucks, doesn’t it? Not necessarily, not if you prepare the right dishes.

Dessert, for example, is often considered a rich, decadent, calorific treat that causes you to gain weight by merely being in its presence. If you’re smart with your ingredients and preparation techniques however, you can whip up a sweet, healthy, utterly delicious dessert in no time at all. Check out these awesome healthy desserts that are perfect for those long summer days.

Mixed Fruit and Frozen Yoghurt Bowls

This first dessert is incredibly simple to make, yet it tastes amazing and is packed full of vitamins, protein, and calcium, with the added bonus of being low in fat and calories. Best of all is the fact that it can be prepared in advance and stored in the freezer until you’re ready to serve. Here’s what you’ll need:

Ingredients:

  • · 1 tub of Natural or Greek Yoghurt
  • · 2 tbsp honey
  • · 125g of fresh blueberries
  • · 50g of fresh raspberries
  • · A handful of chopped mint leaves

Method:

  1. In a blender, place your tub of natural yoghurt, the honey, 25g of raspberries and 100g of the fresh blueberries and blend everything together until the mixture is a brilliant blue.
  2. Next, remove from the blender, place into a Tupperware bowl and freeze for at least 4 hours.
  3. 10 minutes before serving, remove from the freezer, place into an attractive bowl when soft, and decorate the dessert with the remaining mixed berries. You can use alternative berries if you wish.
  4. Scatter with fresh chopped mint leaves and enjoy in the hot sunshine.

Matcha green tea pancakes with fresh strawberries

This next dessert may look unusual, but it tastes amazing and is very easy to prepare. Made with fresh powdered matcha green tea, it is packed full of immune system-boosting antioxidants, along with plenty of vitamins, minerals, and flavour. To make this awesome dessert you will need:

Ingredients:

  • 1 cup of fresh oats
  • 1 ½ heaped tbsps of matcha powder
  • 1 whole egg
  • 1 cup of milk (water or almond milk can be used instead)
  • 1 ripe banana
  • 100g sliced strawberries
  • Coconut oil
  • 100ml organic honey plus a drizzle more for serving
  • 50g chopped pistachio nuts

Method:

  1. In a blender, place the oats, egg, milk, banana, honey, and green tea, and blend until a thick but smooth batter is formed.
  2. Set the batter aside, heat a non-stick skilled over a medium heat, and add the coconut oil.
  3. Once hot, take a ladle of the pancake batter at a time, and cook the pancakes, making sure not to burn them.
  4. Build up a stack of pancakes as you go, adding sliced strawberries under each layer until the batter has been used.
  5. Drizzle the pancakes with a generous amount of organic honey, and scatter the chopped pistachios over the top, before finishing with a whole sliced strawberry.
  6. Yum!
