Tasty Coconut Potato Soup Recipe
Potatoes are a great source of carbohydrates, and they make a great soup that everyone must try. Potato soup takes less time to make, and it is great for all ages. You can take potato soup with your favorite meals and bread as well. Below is a quick and easy recipe you can follow and make your potato soup.
• 4 large potatoes
• 2 big carrots
• 1 large green pepper
• 1 large freshly cut onion
• ¼ tablespoon of black pepper to taste
• 1 tablespoon of dried thyme
• Freshly chopped coriander
• 1 medium cooking pot
• 3 cloves of garlic
• Freshly cut ginger
• 1 cup of coconut milk
• 2 tablespoons all-purpose flour
• ¼ tablespoon of salt
• 4 cups of water
• 2 tablespoons of cooking oil.
Method of preparation:
Put two cups water in the cooking pot and bring the water to boil. Peel your potatoes and carrots and a clean them under running water. Now place your peeled potatoes and carrots into the boiling water and let the potatoes boil for about ten minutes.
Remove the boiled potatoes and carrots from the water and place them in a clean bowl. Put the boiled and cooled potatoes and carrots in the blender and add the remaining two cups of water. Puree the potatoes with the carrots until you have a smooth paste.
Take your 3 garlic cloves and freshly cut ginger, grate them to get a fine paste. You can use the part of your grater that has fine little openings to get a fine paste.
On a clean cooking pot, place the chopped onions and add a little oil to fry the onions until they are brown. This process can take about 2 minutes. Add some salt, dried thyme, grated garlic and ginger and stir the mixture. Chop the green pepper into small pieces and add them to the mixture. Keep stirring the mixture for 2-3 minutes.
Now take the pureed potato and carrot paste and add to the ingredients in the cooking pot. Stir the mixture for 1 minute to ensure everything mixes well. Add a cup of water and keep stirring to get the consistency that is needed. Add black pepper and keep stirring to ensure that the taste you need is achieved. Lower the heat and let the mixture cook for about 3 minutes.
Now your coconut potato soup is almost ready. Take 1 cup of coconut milk and add to the mixture. Stir well and let it simmer for 3 minutes under low heat. Finally add your freshly chopped coriander on stir again. Your soup is now ready to serve.
This soup can serve about 4 people. In a clean soup bowl, use a soup serving spoon and scoop the soup into every bowl. You can serve this soup with bread, cake, and other pastries of your choice.
