• 2 cups chopped ( cubes) Pumpkin
• 2 cloves garlic (grated)
• 2 tablespoons of grated ginger
• 2 cups of chicken stock
• 1/2 tablespoon salt
• 2 tablespoons Olive oil
• 1 cup chopped onion
• 1/2 tablespoon of dried rosemary.
• 1/2 tablespoon black pepper.
• 1 cup of whipping cream
Method of preparation
In a clean pot place, the pumpkin cut into small cubes, some salt and cover the ingredients with water and bring to a boil. When ready drain the water, in the blender put in small batches, add the chicken stock and whiz the mixture until smooth. This should take about two minutes.
Put two tablespoons of olive oil in a saucepan and heat under a low heat, add chopped onions and stir until golden brown, add a pinch of salt, grated garlic and ginger, and black pepper, keep stirring until the ingredients mix well.
Now mix your smooth paste with the well-cooked onions and other ingredients, stir to mix. Put the cream and keep stirring until the mixture is consistent.
