Pumpkin is a great source of fiber that we all need in our daily diet. Did you know that for every female below 50 years of age should take about 25 grams of fiber daily, and all men below 50 years of age should have a daily intake of 38 grams of fiber.

By taking in our diets it helps in slowing the rate of sugar absorption into the blood and also helps in promoting regular bowel movement. Taking enough fiber daily can help in reducing the risk of Colon Cancer.

Pumpkin is among the foods that a great source of beta-carotene that we need in our bodies. Beta-carotene is a great antioxidant that our body converts into vitamin A.

This powerful antioxidant from pumpkins helps our bodies in preventing some heart diseases, helps in delaying aging and may also prevent the development of some diseases like Cancer. Pumpkin is packed with fiber, vitamin C, and potassium that we need in our daily diet.

The potassium in pumpkins helps in reducing the risk of stroke and even protecting against Muscle mass loss. In case you are wondering how to make this soup and enjoy it, worry no more for I have outlined below all that you need to know and do in order to also have a taste of this healthy soup.

Ingredients:

• 2 cups chopped ( cubes) Pumpkin

• 2 cloves garlic (grated)

• 2 tablespoons of grated ginger

• 2 cups of chicken stock

• 1/2 tablespoon salt

• 2 tablespoons Olive oil

• 1 cup chopped onion

• 1/2 tablespoon of dried rosemary.

• 1/2 tablespoon black pepper.

• 1 cup of whipping cream

Method of preparation

Step 1.

In a clean pot place, the pumpkin cut into small cubes, some salt and cover the ingredients with water and bring to a boil. When ready drain the water, in the blender put in small batches, add the chicken stock and whiz the mixture until smooth. This should take about two minutes.

Step 2

Put two tablespoons of olive oil in a saucepan and heat under a low heat, add chopped onions and stir until golden brown, add a pinch of salt, grated garlic and ginger, and black pepper, keep stirring until the ingredients mix well.

Step 3

Now mix your smooth paste with the well-cooked onions and other ingredients, stir to mix. Put the cream and keep stirring until the mixture is consistent.

At this point ensure your heat is not too much lest you burn your tasty soup and start wondering what to do with a burned soup. Now season your soup as needed, add some rosemary and top with some olive oil, sprinkle some toasted pumpkin seeds on top to enjoy the crunchy feeling.

Step 4

Your soup is ready, to serve it, put in two bowls and serve 2 people.
