Vegetable broth recipe is one of the easiest meals to make. Today I will take you through a very easy broth recipe you can make within a very short time.
Vegetable Cooking oil (Sunflower) is good
A bunch of Coriander or dhania
Chuck on bone (beef) for the stock
½ teaspoon of curry powder
Clean the carrots under a running water and place in a big bowl. Clean the butter nut as well and place in the same bowl. Using a sharp knife slice the carrots in small cubes and place them in separate clean bowl. Cut the butternut into small cubes as well and mix with the carrot cubes.
Using a clean cooking pot place the butternut and the carrots in the cooking pot, grate the garlic cloves and ginger and bring to a boil for 10-15 minutes. Drain the water and let the mixture cool off. Using a different clean pot, boil the chuck on bone (beef) to get the stock.
Using a clean pan or cooking pot put in a little vegetable cooking oil and place under a low heat. Slice the white onion into thin pieces and fry them under minimum heat and a little oil. Add a pinch of salt and black pepper, cut very tiny pieces of celery and put in the pan and mix with the onions, keep stirring for about five minutes.
In a clean blender, put the boiled carrots and butternut cubes and puree them to get a smooth paste. Now pour this mixture into the fried white onions and celery and stir the mixture. Boil the mixture for about 5 minutes. Add about 2 cups of the beef stock to get the consistency that you need and boil for 2 minutes.
To Season your broth, mix a pinch of black pepper, ½ teaspoon of Curry powder, ½ teaspoon of turmeric, some chopped parsley, and stir all together, use warm water to mix or use some of the beef stock to make the mixture. Add this mixture to the soup and stir for about 2 minutes.
Clean and cut your coriander into small portions and put on top of the broth, let the broth simmer for 3 minutes
Your Vegetable broth in beef stock is ready. This broth can serve about three people comfortably. You can enjoy this broth in different ways.
